Very simple–and very warming. Serve with
big chunks of pumpernickel bread.
NOTE: You can substitute Brussels sprouts (coarsely
chopped) for all or some of the cabbage.
2 medium-sized potatoes
7 cups vegetable broth or water
1 to 2 tablespoons butter
3 cups chopped onion
2 teaspoons caraway seeds
2 teaspoons salt (less if using vegetable broth and it is
salted)
8 cups shredded green cabbage (1 medium head)
Freshly ground black pepper to taste
OPTIONAL TOPPINGS:
Sour cream or yogurt
Minced fresh dill
