PEACH BUTTER
Preparation time: about 20 minutes, plus time to cool
Yield: About 3/4 cup

6 medium-sized (3-inch diameter) very ripe peaches
6 tablespoons fresh lemon juice
1/4 teaspoon cinnamon
A dash or 2nutmeg
A dash or 2 allspice or cloves
Sugar or light honey to taste

  1. Peel, pit and slice the peaches. Place them in a medium-sized heavy, non-reactive saucepan. Add the lemon juice and spices. Heat to a boil, lower the heat to a simmer, and cook uncovered for 8 to 10 minutes. Remove from heat, and let it cool to room temperature.
  2. Taste to see if you would like it sweeter, and add sugar or honey accordingly.
  3. Transfer to a jar with a tight-fitting lid, and store in the refrigerator. This will keep for about a week
